Spicy Shrimp Cakes
Here's how I made the shrimp cakes..

• 1/2 Pound Diced Raw Shrimp
• 1 Celery Rib, Chopped Fine
• 2 Tbsp. Fresh Chive, Chopped Fine
• 1 Jalapeño, De-seeded, Chopped Fine
• 3 Tbsp. Panko
• 2 Tbsp. Mayo
• 1 Tbsp. Dijon
• 1/2 Lemon, Juiced
• 1/2 tsp. Old Bay
• Olive Oil

Directions:
1. In a medium mixing bowl, mix all ingredients together (except olive oil) until combined.
2. Shape shrimp cakes into golf ball size and flatten with your palm or a small plate.
3. In a large saute pan, heat 1 tbsp. olive oil over medium-high heat.
4. Add cakes to pan and cook for two minutes on each side, until shrimp cakes are opaque. Serve immediately with your favorite sauce and a light salad.
