Stove-top Roasted Tomatoes
I love roasted tomatoes but had no time to make them in the oven today, so I made them on the stove-top.
This is an easy, fast way to cook down your tomatoes and use them on toasts, in scrambles, on burgers, or chill as a salad component.
Stove-top Roasted Tomatoes

Ingredients:
• 2 Cups Cherry and/or Grape Tomatoes
• 1 Tbsp. Olive Oil
• Salt
• 1 tsp. White Balsamic

Directions:
1. Heat a medium skillet oven medium heat.
2. Add olive oil, tomatoes, and a large pinch of salt to pan.
3. Toss tomatoes in skillet so every one is covered with oil/salt.
4. Reduce heat to medium low, and cook for 15 minutes until tomatoes are cooked through and "blistered," stirring occasionally.
5. Add white balsamic and cook for an additional 2ish minutes.
